## Executive Sous Chef — Bear Creek Golf Club

We are looking for an Executive Sous Chef who will help shape the culinary experience at Bear Creek Golf Club. In this role you will ensure compliance with the national programs such as Menu Program, Approved Product List and Inventory procedures. You will be responsible for selection, development and retention of talented culinary staff and will supervise employees in the daily operation of the kitchen to ensure quality and timeliness of product. Consistent attention to financial performance is expected: ensure financial targets are being met and appropriate accounting procedures are being followed consistently.
You will respond quickly to guest requests in a friendly manner and follow up to ensure guest satisfaction. Keeping the kitchen clean and sanitary and in compliance with all federal, state and local laws is an essential part of the job. You may be required to work any position in the kitchen as needed and to assist in creating menus, custom menus, features and more as needed. Maintaining constant communication between departments and keeping other departments informed about special programs and events is also part of daily work.
Some of the typical duties and expectations include:
- Ensure compliance with national menu and inventory programs and the Approved Product List.
- Select, develop and retain culinary staff and supervise daily kitchen operations to maintain quality and timeliness.
- Monitor budgets, revenues, inventories and requisitions and ensure proper accounting procedures are followed.
- Assist in menu creation, custom menus and daily features; step into any kitchen position as required.
- Maintain sanitation and regulatory compliance for the kitchen and food service operations.
Qualifications and credentials we require or prefer are straightforward. Previous experience in a lead culinary role is requested. High school diploma or equivalent required. Bachelor’s degree, culinary degree or certificate preferred. Strong attention to detail, planning and organizational skills are necessary. Experience supervising others and leading a team preferred. Good verbal and written communication skills are required.
Working schedule and certifications:
- Will often be required to work nights, weekends and holidays.
- Food service permit as required by local or state government agency.
- Serv. Safe certification must be obtained within 30 days of hire.
Physical and mental demands include moving about the kitchen, handling various products and utensils, and lifting of up to 50 pounds. Communication skills are used a significant amount of the time when interacting with guests or staff members and when giving instructions. A significant portion of time will be spent reviewing budgets, revenues, inventories and requisitions, requiring reasoning and thinking skills. Supervising several employees requires problem solving, reasoning, motivating and training abilities. Mathematical skills such as profit/loss concepts, percentages, and variances are used often.
