JOB TITLE: Line-Prep Cook DEPARTMENT: Kitchen
REPORTS TO: Sous Chef(s) WAGE CLASS: Full Time Year Round
Position Summary: Under the direction of the Sous Chef(s), cooks and prepares a variety of food products, including meats, seafood, poultry, vegetables, sauces and stocks according to the club’s standard recipes using a variety of equipment and utensils according to the daily prep list.

Essential Functions:
· Follows all state and local health and food safety regulations.
· Follows proper food handling, storage, labeling, dating, and rotation procedures.
· Follows all safety procedures for operating and cleaning machinery.
· Knowledge of and ability to perform required role during emergency situations.
· Takes inventory of all items required for station set-up and determines those items that require preparation.
· Requisitions items needed to produce menu items.
· Notifies Sous Chef of expected shortages.
· Sets up and maintains a clean, organized, and sanitary workstation throughout the shift.
· Prepares items according to standard recipes, specifications, and presentation standards.
· Prepares menu items as needed for member and guest service, ensuring all products meet Club quality standards.
· Executes assigned station responsibilities during service.
· Coordinates and times orders with other kitchen operations.
· Ensures assigned work areas and equipment are clean and sanitary.
· Properly cleans and sanitizes workstation and equipment after use.
· Covers, dates, and neatly stores all reusable leftover products.
· Closes the kitchen properly using the closing checklist.
· Makes recommendations for maintenance, repair, and upkeep of the line prep area and equipment.
· Works collaboratively with chefs, cooks, stewards, service staff, and managers.
· Assists other kitchen stations and team members as operational needs require.
· Attends kitchen staff meetings and offers suggestions for improvements.
· Assists with other duties as assigned by the Sous Chef(s).
Intellectual Demands:
· High School diploma or GED.
· Successful completion of a two-year course at culinary school is preferred.
· A minimum of two years of experience in kitchen preparation and cooking is preferred.
· Willing to train if education and experience preference is not met.
Licenses and Special Requirements
ServSafe or similar food safety certification
Physical and Environment Demands:
Must be able to stand for long periods of time and able to lift or carry up to 50 lbs.
Frequent bending, stooping, and reaching
Noise level is generally moderate but may be high during busy events or outings
· Continuous repetitive motions.
· Work in hot, humid and noisy environment.

Pay: $20.00 – $24.00 per hour
