Country Club Overview
Twin Hills Golf and Country Club is a historic golf club just minutes from downtown Oklahoma City with approximately 600 members. Built in 1923, the golf course features rolling hills, tight fairways and firm, fast greens. The golf course held the 1935 PGA Championship along with several PGA tour and other national events. With a brand new Clubhouse opened in 2023, the state of the art kitchen is perfect for the Dining and Special Events held throughout the season.
Job Summary
We are seeking a strong leader who is a dedicated and passionate Executive Chef with a la carte and banquets experience to join our exceptional team at a competitive pay rate (80K-100K/Yr DOE) plus incentive plan and benefits (PTO, 401K, Vacation, Holiday and Health Insurance) for Full-Time associates.
Position Concept: Responsible for all food production including that used for restaurant, bar, catering and the halfway-house. Run an efficient kitchen that produces the highest quality of food while maintaining the targeted club-based food costs. Develops menus, food purchase specifications and recipes. Supervises food production. Develops and monitors food and labor budget for kitchen staff. Checks in and monitors food and supply inventory. Maintains the highest food quality and sanitation standards. Directs food delivery to tables and banquets. Directly supervises the Bar Manager, Wait Staff, and managers of all other outlets such as snack bars, halfway houses, etc. Plans and implements budgets; hires, trains, and supervises subordinates.
Essential Functions
Hires, trains, supervises & evaluates kitchen staff.
Plans menus for all profit centers.
Schedules and coordinates the work of chefs, cooks, and other kitchen staff to assure that food preparation is economical and correct within budgeted labor cost goals.
Establishes quantity and quality output standards for personnel in all positions within the department.
Approves the requisition of products and other necessary food purchases.
Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas.
Establishes controls to minimize waste and theft and maximize profits.
Implements training of kitchen staff to increase their knowledge about safety, sanitation, and accident prevention principles.
Develops standard recipes and techniques for food preparation and presentation which assures consistency, high quality, and minimal food costs. Exercises portion controls for all items served and assists in menu pricing.
All recipes are to be written down and kept in a recipe book. Pictures of presentation to be taken of all dishes and visible to cooks with portion sizes.
Projects food and labor costs and monitors actual financial result. Takes corrective action as needed to ensure financial goals are met.
Attends food, beverage, and management staff meetings.
Consults with event coordinator about food production for special events.
Cooks or directly supervises the cooking of items requiring skilled preparation.
Evaluates food products to assure quality standards are met.
Plans and manages employee meal program.
Hires kitchen staff, evaluates job performance, corrects, rewards and disciplines staff in a fair and legal manner.
Puts procedures in place to assure a smooth-running kitchen at all times. Makes sure these procedures are always adhered to.
Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
Motivates and develops staff including cross training.
Periodically visits dining areas to welcome guests.
Hosts taste panels to assess feasibility of proposed menu items.
Performs any other culinary related functions necessary for the membership.
Job Requirements
At least 5 years of progressive experience in a restaurant, club, hotel, or a related field; or a 2 year degree (Culinary) and 3 or more years of related experience; or a 4 year degree and at least 1 year of related experience.
Previous supervisor responsibility is required.
Strong leadership skills
Must have knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations.
