Line Cook - Grill

We are seeking an experienced and detail-oriented Line Cook to manage our grill and rôtisseur station. In this role, you will be responsible for butchery, executing protein temperatures to guest specifications, and maintaining high standards of station cleanliness and food safety.

Key Responsibilities:

Fabrication & Prep: Trim, fabricate, and portion meat, fish, and poultry to the specified size and / or weight.Station Management: Utilize station checklists to fully restock and prepare the grill/rôtisseur station prior to dinner service.

Keep the workspace clean, organized, and sanitary throughout service.Cooking & Execution: Prepare all proteins accurately to requested guest temperatures with consistent quality and presentation.Safety & Compliance: Strictly adhere to all local, state, and national health standards for safe food handling and sanitation.Teamwork & Adaptability: Assist other kitchen stations or banqueting operations as needed, maintaining a professional demeanor and positive working relationships with all team members.Qualifications:

Proven experience as a Line Cook operating a grill, rôtisseur, or high-volume protein station.Strong knife skills and foundational knowledge of meat, poultry, and seafood fabrication.Solid understanding of cooking temperatures, food safety regulations, and kitchen sanitation protocols.Ability to work efficiently under pressure in a fast-paced environment.Schedule & Hours:

Shift: Dinner Service, 2:00 PM to Close (approx. 9:30 PM – 10:00 PM).Schedule: Wednesday through Sunday (typically); expands to Tuesday through Sunday during peak season.Overtime: Extra hours and overtime opportunities available during large club events and private banquets.Job Types: Full-time, Part-time, Seasonal

Pay: $25.00 - $28.00 per hour
