About the Role
Chef de Cuisine
Norwood Hills Country Club | St. Louis, MO
About Us
Norwood Hills is a family-oriented, golf-focused country club. Our kitchen runs 2 fieldhouses, the 19th-hole bar, a large dining room with traditional table service, and, in season, the pool.
The food is casual, but we hold it to a high standard. We're looking for a Chef de Cuisine who is a match for the club: someone who leads a team well and can bring consistency to every shift, across every part of the operation.
The Role
The Chef de Cuisine runs day-to-day kitchen operations for our golf-focused, bar-forward menu: elevated pub food, turn snacks, and casual dining. This is a leadership role first. Your main focus is building a strong team and a set of systems that keep quality consistent on every shift, whether you're on the line or not.
This is also a hands-on job. You'll work the line when it's needed, especially early on, to set the standard and keep ticket times fast for a golf crowd that's constantly moving.
What You'll Do
Lead, schedule, and develop the back-of-house team: sous chefs, expo, line and prep cooks, dishwashers, and shift leads.
Hold the team accountable to clear standards, and follow through consistently when standards slip.
Build kitchen systems that keep quality the same from shift to shift.
Work the line yourself, especially while rolling out new systems and during peak turn and event periods.
Interview, hire, train, and develop kitchen staff.
Keep all storage areas clean and organized, including walk-ins, dry storage, freezers, and prep stations, with clear labeling and FIFO rotation.
Hold the team accountable to food safety, sanitation, and health code standards. Pass all health inspections.
Manage labor costs and kitchen inventory, and work with the Purchasing Director and FB Director to make sure product is ordered for all dining areas.
Coordinate with front-of-house and golf operations for tee-time rushes.
Lead by example on punctuality, work ethic, and professionalism.
Refine technique and presentation on existing dishes over time, without losing member favorites.
What We're Looking For
3+ years in a kitchen leadership role, managing a full kitchen staff.
A proven record of holding a team accountable and following through on standards.
Leads from the front and is willing to work the line, especially during system changes.
Highly organized and systems-minded, with a focus on repeatable consistency across shifts.
Fastidious about detail and cleanliness.
Comfortable running both a fast-paced bar and turn environment and a full-service dining room.
ServSafe certified, or able to get certified quickly. Knows local health and safety regulations.
Experience with inventory and cost control.
Private club experience is highly desired. Hotel experience is a plus.
Available for a flexible schedule, including weekends, holidays, and early mornings in peak season.
