Cook 1
The Cook 1 position is a senior level position, normally consisting of Meat Station (grill) but is able to work any station, any time, with zero hesitation. This position requires attention to detail, follow through, and the ability to multitask and prioritize needs while maintaining composure, focus, and productivity.
Duties & Expectations
Full understanding of any meat or fish, with proper seasoning, resting measures, exact temperatures, fabrication, butchery, and portioning.
Sauce making - consistent and vibrant with taste and texture, with the utmost care taken to them daily.
Strong observer and communicator during service, aligning their dishes with everyone else in a controlled manner.
Watchful eye and mentor to Cook 2’s, 3’s, ensuring recipes and expectations are met before they get to the Chef.
Skills & Qualifications
High School, Culinary School or Apprentice Program Graduate
Prior experience in a Private Club, Hotel, Resort or Restaurant working different stations
Ability to be on one’s feet for long periods of time
Ability to bend, reach, stoop when necessary
Ability to lift but not exceed 40lbs
Have good or very good knife skills and techniques.
Ability to multi-task in a faced paced, high pressure environment
Able to work non-traditional work shifts (hours), weekends and holidays
Be able to read and communicate in English and it is a plus if you can communicate in Spanish
